Gummy bear is a large portion in candy business. Its sales increases greatly in the past years. So how does gummy bear made, here we tell you from a house-made point of view as well as industrial mass production.
Candy liquid preparation: Gummy bear starts with gelatin and that’s the basis for it. First we prepare sugar corn syrup and water. We’re boiling it to certain temperature and cool down to needed temperature. After syrup preparation, we are going to add gelatin into that. That’s what makes a gummy bear a gummy bear. This gelatin comes from pig or cows, hoofs and skins and things like that. Basically it’s just collagen that’s broken down into smaller molecules. After gelatin melting done, all that remains for us is to add color and flavor and a little bit acid. We should choose the proper acid to match the flavor.
Molding: To make gummy bear shape, we start with cornstarch as the mold base. So what we gonna do is make the gummy bear shape with a press board (designed to have bear shape) into the starch. And then we have shaped holes in the starch base where we are gonna fill those holes with the candy. These will dry overnight and actually the starch will pull some of the moisture out of candy to get the final moisture content. Plus, the gelatin once it cools will turn into a gel and the end result is a gummy bear.
Chemical nature of gelatin: If we put the gummy in a microwave and warm it for 10seconds, it shows one of the interesting properties of gelatin which is its thermos reversible. If you melt jelly back up above its melting point, it goes back to being a liquid. The gelatin flows and then when it cools back down again it becomes a puddle. So based on the chemical nature of gelatin molecule, the end of those protein strands when they gel they form this triple helix as opposed to another tighter type of bond like you find in starch and pectin. So when you heat it up those just uncoil and go back into solution and go back to being a liquid phase. When you cool it down again forms that triple junction zone and becomes the squishy gummy bear that we just made. Basically we can form the gel solution into whatever shapes and sizes we like due to such gelatin chemical nature.
